A few bloggers asked what for William's potato bread recipe.
Me: Some bloggers would like your recipe for potato bread."
William: Why?
I tell him my answer to the comfort food question.
William: Potatoes and flour.
Me: Annnnd?
W: That's it.
M: No measurements?
W: Whatever you want. Until it feels right.
So that's it people. Potatoes and flour. Mash potato, add flour, fry. No need for your bread machine. This is traditional fattening potato bread.
Now who wants his recipe for Scotch eggs? I'm sure he will be really helpful.

LOLOLOL He cooks like I do sometimes. When it comes to doughs and stuff like that, I go strictly by feel. I have to admit though, these sound good.
Now that's two of embee's favourite foods and he's not supposed to eat too much of either! oh and he loves scotch eggs.

William is right, it is just flour and spuds, but we absorb the knack of potato cakes from a very young age so I'll try to help out 'cos I love me some potato cakes.
Use last nights mashed potatoes - no I don't know why, just do.
Mix them with a bit of flour, start with a small bit and keep adding little bits until the mix is sticking together enough to make into little cakes. Be careful too much will make them taste like flour and that's crap.
Pat into little cakes and fry in the hot pan you did the rest of the fry in, eggs, bacon mushrooms etc. Give the pan a bit of a wipe with a paper towel first to get the debris out. Fry until golden brown, put a bit of butter on and eat hot with a cuppa.
YUM!
PS: A bit is probably a tablespoon for the flour and 1/2 oz for the butter.

I am glad he gave the recipe, because I was thinking potato bread was a delicate balance of mashed potatoes in a yeast/flour dough creating a loaf of bread un-equalling none in this modern world. This potato bread I can do. And thanks Boliath for detailing the process.
He sounds just like my grandmother when I asked her for her crepe recipe.
This is how I cook also. My recipes all say things like, "some brown sugar. You know. Enough."
Kelly's like that doesn't use a recipe just put it together till it feels right. Although how do you explain to the web what feels right?
